Protein Muffins

Protein Muffins Recipe

Makes 6 small muffins!

(approx 430kcal)

  • 50g oats (I use the Aldi organic ones, just because they are huge and chunky!)
  • 30g chocolate whey protein powder (or any flavour)
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp cacao powder
  • Splash of milk

Mix in a bowl and transfer to muffin cases. Pop a berry or slice of banana on top and push into mixture. Sprinkle with desiccated coconut. Bake Gas 6 / 200 celsius for 20 minutes.

Please don’t fear Whey Protein Powder, it’s not just for Body Builders! It is after all just filtered milk and contains all 9 essential amino acids and is a really versatile and convenient ingredient. It’s also a great supplement for people who struggle to eat adequate amounts of protein.
