
Super low calorie chocolate pudding
Do you want to enjoy a super low calorie chocolate pudding? (50 calories…yes you heard right! plus fruit of course)
- 3 tsp Options hot chocolate powder
- Handful of ice
- 1 tsp xanthan gum
- A little water
- A couple of berries
- Sprinkle of coconut
Blitz the ingredients in the blender and add a little more water if it’s too thick, or more gum if too runnyI Top it off with a sprinkle of coconut and some berries. I also added sugar-free Butterscotch Sauce from MyProtein (which I might add is amazing…I have it on everything!).
Xanthan gum (not a nice name!) can be found in the FreeFrom aisle in any supermarket, it’s just a thickening agent that is an alternative for people who are gluten intolerant.
